Topic booking before or after arrival in Tanzania

Just wondering if past volunteers can shed some light on to the ease of booking hotels and safaris while in Tanzania. I am worried things will be harder to book from there and I might get ripped off. Please let me know. Thanks.

I am planning to apply for volunteering the following fall in Singida and I am making a rough plan for travelling afterwards, for costs/duration. I would like to include in this,  Zanzibar, Kenya and Uganda.
